Ok so I got a little excited and forgot to take pics while I was making it but I did take one as I put it in the smoker. Started with a simple one. Sausage with mushrooms, peppers, onions and Colby Jack cheese. Wrapped in bacon ofcourse. Put it in at 235 hoping to crisp the bacon up.
Got three racks of St. Louis ribs today. Seasoned them up. Planning on starting them off tomorrow around 10. Gonna try out the 3-2-1 method. Wish me luck.

Ok I'm started my seasoning process. Sprayed the inside with Pam and let it heat up. Then added some hickory chips. After about 30 min I added apple chips. Five minutes later instead of a smooth stream of smoke there were puffs. About every 30 seconds or so there was another large puff. Is that...
