I am smoking a brisket this weekend and looking forward to it. I am open to suggestions/tips.
i do have a few questions:
Fat cap up or down?
Flip during cook?
inject or skip?
Rub applied over night or a few hours before?
So as I sit here at 3 am the morning of another soon to be disappointing Bears season, I question why I committed to make pulled pork for my buddies. My first pulled pork too. Oh well, smoke on. Got up at 230 to start the coals and join the coyote buddies howling on the patio

And so does my fiance. Wasn't planning on a smoke tomorrow. Didn't take a lot of convincing. Nothing better than beer, bags and ribs. I did two with a 'Memphis BBQ Company" rub that I like and the last one in my own BKemp rub.
Hello, Brian from Illinois. Just got my Master Forge Charcoal smoker for my 30th B-Day Sunday. Looking forward to firing that bad boy up this weekend once a few mods are made (hopefully everything comes by Friday). Cant wait to succeed and fail (hopefully not fail too often).
I am totally new to smoking and planning my first smoke this weekend. Looking at doing a whole chicken. Any tips are welcome. I will post pics good or bad.
Just got my smoker for my 30th bday this weekend. i have a vertical water smoker. nothing crazy/real simple smoker.
