ok...So I only do a brisket every now and then, so I always have to figure things out each and every time.
In this case I picked up a smaller packer (10#) that trimmed down to about 9#. this is for a party tomorrow.
Now my lovely bride "understands" when it is done it is done...however she...
I am smoking 4 slabs of spare today on my Horizon 20 RD offset. In the past I have never had a need for rib rack and have always cooked them laying flat. My temperatures are running about 220-230 on the door therms and 270-280 on the Maverick. The fire is smaller than usual and very little...
I typically do the thanksgiving turkey. In the past, I have just set it up on my Kettle and cooked indirect at about 325-350.
Now that I have graduated to the offset, I figured I would want to do at least one before T-day. I am planning on running a hotter fire hoping to be in the same temp...
Since I have had the horizon, I have smoked something every week. Even if it was just desert.
So the wife asked the other day if I would do some steaks using the smoker and not the weber kettle.
I said why not and promptly jumped on the site to she what folks do. I saw several posts about a...
So decided to make a run of PP
I am getting a late start(noon) and this is for dinner. So I cut off an end so it can be done around 6.
Some may wonder why the late start? Well. I had to go and pick up some more wood.
Front half is pecan. Back half is cherry. And here is how it...
Any advice on timing for putting on some corn on the cob while doing a pork loin? First time doing both on the Horizon.
At 225-250 thinking about an hour for the corn. Plan to get a 3#ish roast on. Does two hours in sound about right?
Thanks in advance for the help!
Anyone have the cover Horizon sells for their smokers? Debating getting one, just curious of how durable they are. The is out in the open and not under roof. (If I had a roof for my smoker I would not put a cover on it!)
I cooked these up the other day on pecan hickory and oak. Did a reverse sear to really crisp up the skin. Used my kc bbq rub. Some Montreal steak. And some straight up.
So after my first smoke and reviewing alot of threads, I still have a couple of questions/clarifications which I am sure someone can help me out with.
I intend to use this unit as a wood burner. I have read the thread on fire control, however since I am sure the wheel has been invented...
So, I get my first offset smoker (Horizon 20 RD Marshall) last weekend and my wife says "lets have brisket for Easter". Nothing like jumping into the deep end!
Started with a 14# packer and I added a 7# pork sholder to the mix. Had to have some intermediate time in the oven while at Sunrise...
Hey all, I just picked up my first stick smoker. It looks like I got a steal on a one year old Horizon 20 RD Marshall smoker for 6 bills, however I do have a maintenance question that I could not seem to find.
So there is a little bit of surface rust that I figure I can knock off with a...
Hello all!
First of all, I would like to thank all the post and reviews that guided my decision on getting my first stick smoker.
To keep you from wondering too long, I found a 1 year old Horizon 20 RD Special on craiglist.
I have done just about everything from jerky to turkey on a 22...
