I keep one timer in the house and another one in the garage for the smoker. The house timer bit the dust. The other timer I have is Habor which is a decent timer. Maybe a dual timer under $30.00?
A new butcher shop opened not far from home and I was wanting to fry some bone in pork chops. Everything they had as 2" thick. What do you do with a 2" thick pork chop? Mama never cooked any of these.
So I retired a while back and after drinking Folgers made in a Mr. Coffee drip coffee maker for 50 years went on a quest for something better. Bought a Kuerig (K-Cups and/or ground coffee.) Big improvement. Wife loves the K-Cups. Been buying whole beans and grinding them at home. Tried a few...
Sweet corn is coming in now. I read about folks vacuum sealing corn on the cob with butter , freezing it, and later cooking it boiling water while still in the bag. Does anyone do this?
I'll be 73 next month. 60 years of shooting guns and 50 years working in noisy machine shops have finally taken their toll on my hearing that I needed to address. My first try were some ear buds for 1K I bought a month ago and that was a waste of money. Last week I received a set of over the ear...
I have a LEM Maxvac 250 that does a good job. When sealing foods with a lot of juice it's a hassle keeping the juices out of the seal area so that the seal isn't affected. I do have absorbent pads but their somewhat of a hassle.
The vacuum sealer does have a "Seal Only" option. Is sealing...
Have used it through (2) 10 hour smokes and (2) 4 hour smokes. Bought the (2) probe package. Love the app (IOS) and overall ease of use. Overall it has worked perfectly with the exception of one probe. Battery life is only 2 hours on this probe. Thermoworks tried to troubleshoot the app/probe...
Just got an email that instead of going out of business Fruita Wood is being taken over by a supplier and will remain in business under another name. The details are being worked out.
For years I have bought cherry wood chunks from Fruita Wood. I received an email today that the owner was retiring and the business was closing down. Looking for another good source for wood chunks.
I really like this thermometer. Bought the first one from Amazon in October of 2024 and after one month it died. Push the power button on and nothing happened. Amazon replaced it with a new one hassle free. Now, less than three months later I was planning to use it for a smoke tomorrow. Tried to...
I recently purchased my first piece of enameled cast iron cookware (dutch oven). I was looking over the directions and it says not to use it in a smoker. Do bad things happen to enameled cast iron in a smoker?
Love cast iron cooking and have no problems maintaining my Lodge cast iron skillets. My Lodge cast iron Dutch Oven has/is been a pain. Not matter how hard I try to keep it seasoned the seasoning flakes off especially when cooking pork loin with sauerkraut and beef pot roast.
Got a 9 pounder. Have some Simply Marvelous Sweet Seduction rub and Simply Marvelous Cherry rub. Maybe some pure maple syrup and pure honey? Suggestions for recipes and smoking time/temps welcome.
Just finished two pork butts to vacuum pack for the freezer. Largest one was 10 pounds. 8.5 hours at 275 degrees and it turned out excellent. Anyone do brisket at 275 degrees?
There was a Jewish deli years ago that had the most wonderful Cole slaw on the planet. Unfortunately the owner passed and her store closed. So I am experimenting with Cole slaw recipes. First question? Apple cider vinegar or Red Wine vinegar?
Used it for baking potatoes a couple of times, smoked thighs last night, and baked a pork loin with sauerkraut in cast iron Dutch Oven tonight.
Pros:
Probe temps matches my Thermapen almost exactly.
The probe signal can penetrate a cast iron Dutch Oven with the lid on, inside an oven, and...
Getting ready to do a couple of butts to vacuum seal and freeze. Was looking around and came across some articles about butterflying pork butts and was wondering if anyone had tried this.
