Well I have reconstructed a warming cabinet into a smoker. I posted some pictures on here some time ago. Anyhow I have run into a problem with the heat, or lack there of. My cabinet only gets to a temp of about 160*F max on a hot day. I need/want the temp to be higher somewhere around max...

Is it better to smoke the meat then finish it in a dehydrator, or smoke the meat then finish it in the smoker with low heat?
If you have a smoker with a fan inside with a toggle switch to turn the fan on and off would that be comparable to a dehydrator?

So I have been building my smoker and have most of it complete. I will have to get pictures latter. Anyhow my food warmer had only one wall/single wall so I placed a second skin on the outside, I used diamond plate, I think...
I have a used food warmer which is about 5' 6" tall 22" wide 26" deep. I need to come up with a way to heat the unit for smoke and drying. I also need some racks. Probably need a dampener and an exhaust. Any tips would be greatful
