Sundays farmers market is getting closer. This will be the grand opening day for the season, live music from a local group and things for the kids. We are a pet friendly market

The food trailer next to use has one more permit to get. They are going to buying bread from us so they can make sourdough grilled cheese sammys.
We only came home with 1 sourdough so its toast this morning.
Makes 2 boules or batards. Golden WW is king arthur
bread flour
900g
golden WW or reg WW (I used golden)
100g
water
800g
salt
20g
SD starter unfed or discard
40g
Mix until no dry flour showing. Rest 30 mins covered. Fold dough over all 4 sides, rest 30 mins. Do this fold 3 more times...
Basic sourdough recipe.
500g bread flour
325g water
50g starter (ea)
10g salt
Trilogy I just eye balled.
Flax, chia & hemp
Cover and fridge.
Sunday opening dat at the market went good.
