    Got my new grill all out together today! Went with the Pit Boss Austin XL. Love the cooking area, hopper space and open flame option. Quite the upgrade from my Traeger Lil Tex 22. First Pit Boss I’ve had and already love it! Just in time for cheese season.

    Beef Ribs

    We have tons of beef ribs from our cows we had butchered this fall, so I figured I’d smoke up some. This was pretty simple and some of the best I’ve done recently. Only took about 4 hours, wrapped half way through and came out nicely. Used my simple brisket rub. No need to over complicate it!

    Homegrown Ribeyes on the Traeger

    Decided to throw on some of our home grown ribeye tonight! Lowered the temp a little and grilled a little longer. Used a double garlic rub I got locally. Pulled at 135 IT. Hard to beat it!

    Ribeye and NY Strip on the Traeger

    We got our steer back last week from the butcher so we have been eating beef like crazy! Decided to grill up some ribeye and NY strip tonight. Used a steak rub from R Butts R Smokin for the first time and it didn’t disappoint. I only grill a total of about 14 minutes around 400. Hard to beat!

    Quick Weeknight Meal

    My wife is gone to Bible study tonight so just a quick little meal tonight. Simple frozen pizza just a little dolled up. 400 degrees for 18 minutes on the Traeger. Really loving these charcoal pellets also!
