    Ok,so I have 2 3.5 lb pork bellies that I have cured for 10 days,last night I cold smoked them for 3 and 1/2 hours my question is do I need to continue to keep cold smoking them or should I hot smoke them now they've been sitting a day in a refrigerator uncovered.

    Cheese smoking first try

    Just got a 12 inch smoking cube,going to try and smoke some sharp cheddar cheese , the question I have after reading in the forums here is do I need to vacuum seal the cheese after I am done letting it rest on the kitchen counter,I do not have a vacuum sealer. Thanks for any answers
