How are you guys running the temp higher then 225? my MES 30 only has settings for 225...I've gotten spikes higher then that but as actual settings go thats all I have.

Okay, I picked up an MES30 and I plan on doing some quick smokes using pork tenderloin...I know tenderloin is probably better on a grill due to the short cooking time needed but I hate to nasty up my nice stokes grill.
in the past I've smoked these in my brinkman charcol using this dry rub...

I see people drilling holes and making more air vents, and reading reviews on other sites it appears some complainin' about temps being too low, but I take alot of stuff with a grain of salt.
I thought about a UDS, thats pretty much the same thing as my brinkman (smoke-n-grill, AKA R2D2) only it would be a little bigger
As for starting my RF now, I haven't decided yet...storage is a big issue for me and it would need to be smaller, I thought I could build one with a slip in format...
