My Smoked Ribs - Qview and Recipe

Hi Gang I got a few more details from the Mrs :-) @JJ - Yes Steak Diane Sauce (Hot and spicy). They were tender and probably could have cooked longer to be more "fall off the bone" but they were definately tender. The left overs the next day were also yummy! The temps were not as consistant as...

30 gallon mini reverse flow build

I love this idea and have a question . . . With the smaller barrel holding up the bigger barrel, what consideration have you made (or do you need to) for it possibly tipping over? Will you need something to help balance/stablize? I have 2 45 gal drums sitting around and I'm liking your set-up...

    Earth Smoker Part 3

I'm thinking 2-3 inches, this will allow more air to flow up and help your fire significantly. Although my design is sompletely different, I need/have flame all the time. I have that much distance between charcoal and bottom of fire chamber. I'd give it a try :-) Take care Dave

    First smoke with Joe !

Thank you for the kind works and I'm very anxious to smoke again. I got the recipe for texas rub here but found it to have a little too much pepper. (note to self) I definately fiddled around with vents (even though I told myself not to and just leave it) I took notes on temps every half...

    Why not Cedar ?

Hi Gang I read that cedar should not be used to smoke but could not find the reason. Is it because it will give off fumes (like pine) I planed a lot of cedar and have 5 garbage bags of shavings I was hoping to use :-( Thanks in advance Dave in Canada
