OK, Fired it up and put them on with the trusty ET-73 thermometer.
Smoked them at 240 degrees to an internal 178 degrees. Spritz them every 45minutes with burgundy wine. Took them off wrapped them in foil and let them rest for twenty minutes. The juices were running everywhere.
