My wife, Cindy followed this to a T - except, she used two pounds of sausage - in 1 one gallon bag. She put the pierogies in warm water, so they weren't frozen, but not boiled - they get too soft. Followed it to a T - skewer and all. Our guests went nuts.

Weston Vacu seal plastic bags - can you low temp (225-ish) retherm reheat in them?
We have a Weston 2300 - OMG, love it. Had two Tilias - this is worlds better, but I digress.
I have been told I can retherm in the Weston plastic bags, so I did. No smell, no visible change to the bag, YUMMY...

any BBQ Caterers in the Lexington, KY and Louisville, KY areas? We can do double cooks, but we also get triple booked from time to time and need a catering company to sub-contract under us.
If you know of anyone.... Only experienced caterers with their own rig please...

Brown sugar is just regular sugar with molasses as I understand - so the flavor will be different, but not huge I wouldn't doubt.
I di not use brown sugar in any of my rubs, and i don't miss it.
We had a blast - and we took 3rd place. It was people's choice - and we weren't from that town - 1st and 2nd was. We missed it by 6 votes - I needed your help!

If you don't put the griddle under that hot of a fire, you risk warping the pan. That fire will warp the tar out of that griddle - also starts flaking off layers.
Put the pan on the griddle - plenty hot and nothing burns. Just my experience.

put in ziplock with EVOO and spices - shake
put in cast iron pan - ON TOP of cast iron griddle
over hickory. yumm-o.
Guys, this is what we use for catering and competition. You're not gonna get my azz up at 11, 12, 1, 2, 3, 4, 5, 6, 7, 8, 9, 10, 11, 12, 1, 2, 3, 4, 5 to add wood and check on things.
Get some good sleep, get up, have some breakfast, drive to the location, get the smoker fired up, work all...
Rudy's is one of my faves. The Turkey Breast is AMAZING! I wished I knew what they did with it to keep it soooo moist. They pull it out of the pit and its not dripping (like it would soaking in apple juice or something). It is just real good - and their "Sause"....
