    Seasonings

I always run my rubs/spices by my fiancée first. She doesn't have the same tolerance for spice that I do

    Seasonings

As a Cajun These are my go-to premade seasonings. Curious about what everyone else uses for seasoning. Premade or made from scratch. I make a rub for my ribs, roast, etc from scratch.

Chackbay seasoning is hard to come by anywhere besides Louisiana. When I go back down to Louisiana to visit I usually buy a case or two

If you can find it, Chackbay crab boil is the best imo. That's what I use for my crawfish and shrimp. It's a powder not a liquid. I use Zats liquid in combination with the chackbay powder.

    Still learning my smoker

Yesterday was quite a test for me and my masterbuilt propane smoker. I'm fairly new to the smoking game. Yesterday I did a Boston butt for the first time. Took a lot longer than I had planned but the end result was great. I know I have a lot to learn but this was my first all day smoke...

Thanks Bearcarver, for pointing me to this post. I followed it. Took longer though as I had a couple of stalls but it ended up coming out awesome.

    First Boston Butt

At 6:30 AM Before pulling Pulled apart so easily Stuffed bacon wrapped jalapeños. Used honey pecan cream cheese in some and regular cream cheese in others. Some had some crushed pineapple in them. First time doing whole jalapeños. I usually slice them in halves.

    Bostonian Butt Stalled

Tasted great. I want to tweak my rub I made a little bit. Maybe a little more of a sweet flavor. My fiancée and our guests stuffed their faces though. Also did some jalapeños in the smoker too.
