The company i work for has given me a couple of large Christmas hams for Christmas, but this year i want to do something more with them, does anyone have a idea on hot/cold smoking them. Bearing in mind these a hams that are already cured. Any recipes or tips would be greatly appreciated. thanks...
So i have just finished making my cold smoke generator and i am looking at smoking some cheeses, does the wood chips have to be soaked or are they better to be dry when i put the in the generator? i haven't done this this since i was just a child so i have forgotten a lot. cheers
