Bought some Oysters the other night and kicked them up a few notches. Hope you enjoy..

Covered Oysters with a mixture of peppers, red onions, real butter, garlic, sour cream and bacon
Then topped with Cheese, More Bacon and Jalapeños

Have an 2010 MES 40.. Works great, this Thanksgiving I have been given the task of smoking 2 12-15 pound Turkeys... Cooked one for Christmas & Thanksgiving the last 2 years.. Always put in around Midnight at 230 and was done around 11 in the morning...How long you think I should plan on for 2...
I got my MES40 for Christmas 2010... Since then I have replaced the wires and connectors on the back of the MES at least 4 times.. Wiring gets really brittle and connectors fall off of the element burnt up..
Contacted Masterbuilt twice with all the info, Ser #, Mdl #, etc... Never heard from...
Took an old Carport area that was worthless. Closed it in to make an expansion of my Tiki Bar and Man Cave... Brought MES 40 inside made an area for it.. Only use the ams tray for smoke so don't even open the chip tube at all... Vented out side and it is working great... No smoke at all inside...

Going to try some of my new sauce on them, it is great on ribs. Try it on Chicken now. It is a Blackberry Chipotle BBQ Sauce.

Going to fire up the smoker and make some Bacon-Wrapped Chicken Thighs.. 2 types, one a Spicy Caribbean Jerk. The other soaked in Italian Dressing. With some Baked Beans put some big ole chunks of pulled pork in them and some Slaw..

Bought a 9x9 Tile at Menards yesterday.. Worker said it was as close to unglazed as they had.. Put it in Smoker this morning to season it??
No meat or anything in there, wanted to cook off any stuff on the tile? Smoker at 275.
