I have 6 side ribs and 6 back ribs on the OKJ Highland. I also have a whole pork shoulder but not enough room to cook it all so the shoulder is going on tomorrow.
I originally used some rib racks to stand the ribs up on their edges during the first 3 hours in the smoker, but ditched the racks...
Going to add a top rack for my OKJ Highland. While I like the pre-fab racks, I think their design reduces about 2-3” of cooking space side to side on both levels. This is due to its design—no need for bolts or welds. I can’t fault the design as it’s genius for this scenario.

Been smoking on and off for a while now. Started with a Chargriller Super Pro with SFB, moved to a Bradley (it wasted 30lbs of ribs so it’s no longer used), now I’ve got an OKJ Highland, a Chargriller Super Pro (for grilling only), and a Blackstone flat top grill.
