    1st Time Canadian Bacon

Couple weeks ago, the kids and I went to the store for some pork belly due to the fact we were getting seriously low on bacon. When they told me that they were out (someone came the night before and bought the last 5 or 6 they had), plans changed... Canadian bacon is something I've been wanting...

    Green Chili for the WIN!

We had a chili contest at work this week, and I submitted a green chili that a friend and I have been tweaking over the years. It came out really good. It had a very nice balance of heat and flavor. Little bit of the white stuff outside, but the peppers need to be roasted over some fire to...

    Mother's Day Smoke

My sister asked me to smoke a brisket for the family on mother's day, so of course I said sure! Making zero sense to only have one piece of meat on the smoker, I picked up a couple butts and threw them on as well.

1st real event and overnight cook

I've always enjoyed cooking for myself and a small amount of people. But since I got my new rig, I'm expanding a little and decided to start catering for small events. Figure I'll see how it goes and if I like it, do it some more. Menu for tomorrow is Brisket, Pulled Pork, and Chicken Wings...

Finally got my new smoker last night!

Ordered a Meadow Creek TS120 a little over a month ago. Got it seasoned this afternoon. Gonna throw some meat on it tomorrow after I figure out how to get it dialed in to where I want it. Little fire management... Shout out to Waylon at Himrod Farm Supply and my dad for road tripping with me...

Hi all! I'm Pete. I live just outside Buffalo NY. I started smoking about 8-10 years ago and instantly fell in love with it. Everything about the process... from the prep, to the cook, and of course enjoying the fruit of my labor. I started out using a Brinkman Gourmet vertical and modified the...

Where do I get some wood for a stick burner?

HI! I'm out in Cheektowaga and am looking at a trailer mounted Meadow Creek TS120. I'm just not sure where abouts to get fuel for it... I like to use hickory and apple on my UDS. But as for actual logs, split or not, I'm not sure. Can any of you guide me? Thanks- Pete
