My salami and snacking sticks way too salty?

Yes . There are 2 packets with the kit . One is seasoning , one is a cure mix . It's not straight cure one . When using kits Follow the directions . They will post for ground meat and whole muscle at different rates for seasoning and cure . Again , that cure packet is not cure 1 . You can...

    Saving Pop's brine

You don't want that chemical taste in your products . Standard for making sausage and curing . Just plain salt , kosher , sea salt .

    Cold snowy Day making sausage

Looks great . Leggs 103 ? That's a good one . Nice job on the links . I also like to leave some Italian in a rope . I cook it up like that , then cut it into sections . Came across this the other day . The company I worked for did the new stadium . This is an aerial progress photo . You may...

    Saving Pop's brine

Nice . Now you have an idea of what works . Do a whole bird . 1 gallon water 1/2 cup salt ( your choice , but non iodine ) 1/2 cup brown sugar 1/2 cup white sugar 1 TBLS cure 1 1 tsp orange extract . Inject and soak overnight . Smoke / cook to 160 in the breast . 175 plus in the thigh ...

You got enough steel in there to hold up a second floor . That stuff locks together and should span 8 ' , but that wet snow is heavy .

    Loaf pan Sourdough batch size?

For me , it's the same . I remember you split a batch ( whatever size it was ) and it was way short . This is a 500 gram flour batch . Standard loaf pan .

Egg Burrito , Good way to start a cold day .

Thanks for the comments . It's a good method , but a bit of a challenge . Could use a smaller tortilla , or cut one to fit the size pan you want . A good non stick pan would be ideal . My opinion is there's not much flavor to the turkey grind . I did it as bulk , so I did not use the skin ...

Be interested in that . Love the instant pot for stuff like this . I didn't make it long at the end of a shovel . Easy 10 " plus not counting the drifts . Kids were out there before me , and I got told to go back inside . Talked me into it .

    Cold smoked pork chops

Happy you posted this . I was wondering how they turned out . Nice cook on those . That small " tail " rib / dark meat section is the best . I generally don't brine chops either , unless they're 2 " thick . Thanks for posting .

    Electric Spice Grinders

Mine are manual , but depending on the salt used , it takes a toll on the salt grinder . I'm using Himalayan pink salt chunks . Stuff tears up the head . Anything from OXO is usually good quality , but a quick search didn't find an electric one from them .

    Feeling Crabby Yesterday

Looks good . I don't eat like that much , or at all really . Mostly because I have no idea how to cook it . Love the flavor of crab though . Nice work . If you added the vinegar to the pot before the boil , that could be a reason . I always bring the water to a boil first , then add salt or...
