When using kits Follow the directions . They will post for ground meat and whole muscle at different rates for seasoning and cure .

Thanks for the comments . It's a good method , but a bit of a challenge . Could use a smaller tortilla , or cut one to fit the size pan you want . A good non stick pan would be ideal .

Mine are manual , but depending on the salt used , it takes a toll on the salt grinder . I'm using Himalayan pink salt chunks . Stuff tears up the head .
Anything from OXO is usually good quality , but a quick search didn't find an electric one from them .
