    I prefer bone-in. A little easier and I like the end result. Boneless are fine too but I feel like tying them is a good idea for more even cooking. Not a big deal just an extra step.

    Pellets can absorb ambient moisture, so "dry" is a fairly relative term. So I'd you have a plausible working theory. My recommendation would be to store your pellets in a cool, dry place. Some folks even have issues getting an A-maze-N tray to light or stay lit at times. The company...

    I haven't cooked a brisket, but your mentioning the 13 hour timer caught my attention. Not sure I'd count on 16+ pounds of brisket cooking in that time, even if split in 2 pieces. You may need to add time to that, wouldn't want it to shut off before you're done.

    I agree with tying. I cooked my first boneless one last week. Chose to tie with twine for more even cooking & uniform shape. Came out great.
