FWIW, I was told by a Morton rep many years ago that Tender Quick is approximately 79% salt, 20% sugar, 1/2% sodium nitrite, 1/2% sodium nitrate with a touch of Propylene Glycol.

Great demo today of a maze-type smoker that's infinitely expandable....it can smoke for 24 hours or more...very cool !
Idea came from a ProQ smoker seen a few years ago and a charcoal maze.
I've went through a handful of Foodsavers, I've finally grown a brain (LOL) and I'm now looking for something that'll last a long time (hopefully).
I'm looking at the Pro-2300.
Any experience with this model or can you make another recommendation?
