    Weather is not an issue for us. Smoker is located in the shop and vented out side with a powered exhaust hood.

    One additional thought - We stopped doing cold startup cooks- at times meat tasted bitter or like ash. Now start cooker and let it run for about 30 minutes. Have not experienced bitter taste since doing this.

    If the wood supply is good, suggest checking for restrictions in air flow path. Also consider the amount (weight) of wood being used. We use an electric an use no more than four ounces.

    Might research Cookshack products. Have a SM 160 and enjoy the ease of cooking it provides. Beware products are not inexpensive.

    Many great rubs on SMF JJs mild is a favorite one for us. Also suggest no rub/injection on one butt. Pull it and have several "sauces" for guests to try. Let them select a favorite.

    Never use drippings since the pan is outside the cooker. Drippings are below the safe temperature.
