Just to confirm - you use Alum in the jars, plus picking salt in the brine? The spices/fry ingredients just go in the bottom of the jars (not mixed into the brine on the stove)?

Does pickle crisp solution help with getting the pickles to get crispy? Does it do anything for flavor, or simply add some into whatever brine/recipe that I choose?

I have been considering a ThermoWorks Signals to take advantage of WiFi capabilities. My iGrill2 works good, but I really want a wireless option.
I’ve seen positive feedback on the Signals when it first came out, but haven’t seen much feedback on it recently.

I do not have Pitboss, so may not be super helpful. However, if it is similar to my Traeger, the Smoke setting will not run that low.
Pellet smokers use the pellets for their fuel source, so there will always be some type of smoke. Again, no experience with the Pitboss so I could be missing...
