    My tip is don't smoke flats. I always have less than desirable results with flats. Besides you don't get any burnt ends with just a flat.

    The first time I smoked some ribs my wife refused to eat them because the meat was pink. I tried to explaine to her that the pink color was a result of the smoke not that it was underdone. She would not relent o I ate all of the ribs myself. such a sacrifice.

    Our local Lone Star restaurant used to offer Smoked sirloin on the menu. They don't any more. It was delicious and very tender. Anyone have a method to do Sirloin? It has been my experience that Sirloin usually is tough. How can I smoke it so that it is tender?

    Thoughts on a Traeger junior elite 20

    I just looked at the GMG website and I like the wifi control. That makes it very convenient. I am a lazy chef but I am also a control freak and a techie The GMG satisfies all of that for me. Thanks Salty Jon for the suggestion.

    Good question. The box style smoker I now have won't accomodate a 15lb Brisket. When I do a smoke I usually have a dozen or more friends and family over so I need something that will handle a single 15lb-17lb brisket.
