    Built my own....finally

Thanks to sollaryellow and Pops you guys inspired me with your designs so I finally took a shot at building one myself. I definitely learned a lot this first time around, especially what to do differently next time, but all in all I'm quite happy with the results. Looking forward to firing it up...

    Replacement racks

Hi guys, I'm trying to find extra chrome steel wire racks for my smoker and am getting stumped. The racks I do have measure 14" x 14.5" and I can't find them on any site! Any suggestions on sites to check out that have a good selection of replacement wire racks? Thanks!

    Transporting the finished product

Hi guys, wasn't sure which forum to post this in. I'm smoking up some St. Louis style ribs and a brisket tomorrow and then taking them over to our frineds house for a BBQ. What is the best way to take them with us in the truck? I'm assuming in a cooler with some towels? probably a 25 minute...

Do any of you have a sausage hanging/holder stand?

I went to Home Depot and spent about $6 and made this sausage hanger. I got my inspiration from a laundry rack :-). It folds up for easy storage. I set it up to hold the dowels that fit specifically in my smoker but I can make it wider if I need to by just adjusting the chains at the bottom.

    Venison Brats

I was going to take a shot at making some venison Brats today and use Rytek's Brat recipe. Couple of questions - has anyone used this recipe for venison brats and if so did you or would you recommend any modifications/tweaks? what ratio of venison/pork did you use? Thanks!

    Rinse before dehydrating?

Hi guys, I recently brought an Excalibur dehydrator and I'm getting ready to fire her up for my first batch of jerky (using Antelope round cut). I'm using the LEM Backwoods jerky seasoning mix. Should I give the meat a quick rinse before starting or just put it on the trays right out of the...

Dry Rub for Baby/St. Louis Ribs

Hi folks, I've been using one dry rub recipe for a while now and I'm looking to make a change. We had tweaked and modified a recipe we had found some time back and have used that for a couple of years now. I wanted to work on a new recipe and was curious if there was a "Holy Trinity" to dry rub...

    Bass Pro Shop

I got my gas smoker at Bass Pro last year and so far am happy with it. I can certainly see myself upgrading in the future as I get better at what I do but no complaints at all! Also been looking around for LEM sausage stuffer and these guys seemed to have the best prices...

    Hanging Summer Sausage

Oh boy, well here is my "newbie-ness" coming through...I'm not really sure. I picked it up at Bass Pro last year but I don't see a mfg label on it. Here are a couple of pics of it
