    I tried some 19 and 21mm colegen w a 1/2 tube the 19 would not work at all, the 21 I had unravel it to get started and push it on similar to using hog casings. Could not get sheep casing to work well either. Someone suggest that if you apply cooking oil to the tube the 21mm will work...

    LEM stopped making a 3/8 tube for the 15 lb stuffer, so I am looking to make or modify one to fit any ideas would be appreciated.

    I am looking to see what the diameter of the stuffing tube base is on the vertical stuffer that cabala's sells. If any one could measure it for me, I would appreciate it. I am trying to see if the stainless 3/8 tube would fit the 15lb Lem. Thanks,

    I agree with everyone above, local butcher. I have found once you get to know them they will clue you into when they will have good prices coming up. My local will even call around to his suppliers if I need a large order. Its always nice to have a place you can run to on Saturday afternoon...

    Shooter Rick has a rub that I think is Magic, i think it is called copper head rib rub. I will try to find the link. I am not an expert but it is pretty darn good. Bilbo has another one thats pretty basic but nice to build on.

    snack stick question

    I grind mine usually i think about 1/4 or 3/8 plate mix the ingredients real good, let set over night. Sometimes I re mix again, stuff them and throw them in the smoker. Cook to the temp of your choice, I take mine to about 153 or so for a half hour, shower and enjoy.

    I think most call to shower it in cold water until the internal temp is around 100 or so. This stops the cooking process. Hang at room temp to bloom. I did not understand what the heck bloom was but it does make sausage look good.

    I tried them once but did not have the right setup, and it was a disaster. I will try them again once I find the right stuffing tube for my stuffer. I think its one of those things you need to practice a little.

    BBQ tour for research

    Moonlight in Owensboro Ky is always on my list of places to eat at. Montgomery Inn outside of Cincinnati, have not bee there in 15 years, but it has a lasting memory of places to go back to. I get their sauce as a gift every once in a while.

    I think all summer sausage/salami's have some sort of cure. I just got done making a batch out of the rytek book I think is was the smoked salami. When I get home I can get the name for sure. I just increase the ingredients to suit my taste.
