I do not think you would want to use the pallets for your smoker.
I would buy Hickory for ribs but that just me. You can use Apple, Cherry,Oak are all good. Follow the 3-2-1 method and you will do fine.
I would also suggest a rub on your ribs and membrane removal.

depends on how large the chips are but you defentely want it to dry our some for I would think 3 months. you could wrap it up in plastic and it may dry out faster

They all look like they would do what you want. As for me its gas and as with all looks like you could chain it to tree or something thru the handle if that is possible to keep from beign stolen again.
what they said placing in boiling water should read 212 ? also place in ice water to see if reads around 32 if not they are off and I just plus or minus what diffrence is.
You might check around to find a old Moniter such as schools, library,goodwilll, etc and buy one for temp use until yours can be fixed.

2 cans mushroom soup
2 jars of mushrooms steam and pieces

If you are thinking of buying this I would you go check out the reviews on this smoker. The heating element goes out in a short time frame 1-2 years and replacement is over $80.00. so if you smoke for this amount of time this would not be a good buy in my mind.
Be sure the one you buy has a good sturdy base and be sure to fill with water for proper oil amount required. To avoid boil over after Turkey ready to be cooked place turkey in the cold oil first to coat it than heat up oil and place Turkey in SLOWLY. It will tase excellent. As far as oil I use...
