I have 4 oft these and thet all work great but mine were off a couple dregrees (ice and Boiling Watter test) but I have one now that is remote suspossed to read up to 100' away but mine only good for around 50 at most.

I soak my ribs in classic coke (original soda) and small bottle of Itilian dressing for 24 hrs than apply rub and let stand for couple hours than put mor rub on when i placed in smooker.
You want to make sure all the red stuff is gone fro the inside of the drum. After you season it (coat the inside with Veg oil or spray with pam) I do not think it will rust. Not sure what you are going to do with the fan and I assume you are making a UDS. Do a search for UDS and you will find...
I think you better take more water. If you run into problems and if it lasts longer than 15 day trip that you have planned. one gal a day might be a cutting it a tad close.
All above good points mine is to let ribs rest about 15 minutes after you take out of you smoker. Also they are done when you see pull back from bone and if you twist bone it sould pull from meat very easy. PS if you do chichen and ribs at same time be sure to place chicken on Bottom rack so...
