I'm looking for a economical grill/smoker to use at my sister's house, about 4 times a year. I have posted on the $130 Char Griller off set smoker and its issues. Here is my list: 1- Oklahoma Joe- Banderas model. $600, includes cost of cover and gasket. 2- Oklahoma Joe- Judge model. $600...

    From backyard to Business

Reach out to your local health department for guidelines on permits, work station cleanliness and refrigeration requirements. Any time Government gets involved, the price of fun increases exponentially. Remember, if you become successful and I hope you are, the business owns you, not the other...

    Smokers on sale!

Wow! Windows are an option rarely seen in a smoker. Takes away the desire to open the smoker to see how the meat is progressing. "If your looking, your not smoking", goes away. One big difference with a pellet smoker is they provide a steady temperature. There will be a learning curve. Enjoy...

Baby Backs on a new smoker

Thank you. I have read most of the threads on the site, going back 6 months. A lot of great information here. I really appreciate how open the members are. A Lang would be manna from heaven. Looking at GF models, but not sure. Another thread has, Stumps, Mixon, Assassin as top of class along...

Baby Backs on a new smoker

The day came to cook 4 racks of baby backs on a smoker that I have never used. It is an off set by Nex Gen. I got a lot of good advice from the members on wood/coal selection and how to light it off. I started the fire in a chimney with 25 Royal Oak briquettes, 7 large hunks of FOGO lump and...

Test fire of LOGO, RO Embers and Kingford Cherry Wood

It has been one hour and I still have very good heat retention. I added 4 more pieces of FOGO lump and they ignited in 5 minutes. Looks like my cook will be okay as I know I can maintain a proper fire. I used to light Kingsford blue bag briquettes with newspaper. It was a smoky mess. A few...

Test fire of LOGO, RO Embers and Kingford Cherry Wood

So, I'm cooking ribs tomorrow on an offset smoker, that I have never used. I have a Traegar Texas at home. I lit a kettle with 20 Royal Oak Embers briquettes, 7 or 9 hunks of FOGO lump and 2- 3" X 4" Cherry wood chunks by Kingsford. To ignite, I spread some cooking oil on an 8" paper plate, and...

    best portable propane grill??

Get one with a proper stand, that is sturdy and tall. You do not want to kneel down all the time you tend your cook.

    baby backs

Looks good. I like trying different rubs to see which the family likes best. Just try to keep them identified so you know which is which.

    Size of smoker

I had an old charcoal grill I selected because I could fit 6 racks of baby backs on it, side by side. If in doubt, see the grill before you buy and measure the rack to ensure your meat will fit.

    Refresher Please - Baby Backs

The ribs the local stores carry where I live weigh about 3.1 pounds. On my Traegar Texas, I run control temp at 225, but that results in a real temp of 250. I use a Termo Works grill thermometer at far end, at grate level to monitor the smoker temp. My cook is 2.5-1.5-.5. I like a little more...

    Wrap in a Pan?

Yeah, I got the Weber Rack at Ace Hardware. In Cali, its $29. The price of freedom is much higher behind the wall. I guess I will use the large pan for the wrap process. Thanks

    Wrap in a Pan?

Hello SMF, I'm smoking baby back ribs for a family party at my sister's house on Sunday, using an off set smoker that I have never cooked on. The grill size is 15 3/4" X 27 3/4". I want to cook 4 racks, but 3 will do. Questions: 1- I normally don't cut racks into smaller portions, but I can do...

I just keep the bin full, or open the door and push toward the auger opening.

    B&B Charcoal

I looked for those locally and could not find them. The ACE store I bought the B&B briquets sold out. I bought a small 9 pound bag. Decided to give the FOGO brand of lump a try instead.
