There is probably not much more to say about the MES30 vs MES40 comparison than what has alread been said. If you had asked for a comparision with a stick burner, gasser, charcoal, pellet , or another brand electric (such as a Bradley) there would be more to say and a decision would be much...
In my opinion, unless having enough space for the larger MES40 is a problem the long term enjoyment of having the larger MES40 would overshadow any short term enjoyment from saving money on the purchase of the smaller MES30.
Excellent information. I previously thought the primary reason for the disparity between my MES's temperature reading and my Maverick's temperature reading was due mostly to the different locations of the probes. That is, the temp along the back wall just above the element (where the MES probe...
There are a lot of happy MES owners on this forum. Especially those that added the AMNPS to their setup. The problem with reading reviews (sometimes) is that the reviews may apply to older models that have since been improved and/or the the majority of persons that submit reviews are those that...
I place the AMNPS inside a cheapo baking pan (the kind you get at a thrift store for a few dollars) that is just a bit larger than the size of the AMNPS. I drilled a series of holes along the sides of the pan to let a bit more air get to the AMNPS. This works great as a heat shield and I also...
The AMNPS is a solution that works very well with the MES. That is, with the true "digital electric smokehouse" MES. With the MES you can get enough air inside the box by pulling out the loader and chip tray a few inches. On the other hand, the Masterbuilt analog smoker (which is being called a...
Too thick of smoke at any time, no matter how long or short of time it goes like this, is not good. It can leave a bitter flavor on the surface of the meat. It is better to put just a few chips in the loader at a time until you get a feel for what is sufficient without overdoing it. Too little...
This is just a guess...
I think that the pellets got nice and dried out after being in the MES during the hot smoke and then the extra air they got when you opened the door to remove the birds got them going again. They continued to burn with the door closed because the air is sufficient when...
The amount of smoke flavor can be affected by several things, such as the type of wood used, the length of time meat is exposed to the smoke, the thickness of the smoke, and several other factors. You didn't say what type of wood you were using but a stronger wood (such as hickory or mesquite)...
I have a MES 40 (a few years old) and it works fine out of the box for hot smoking even without the chip tray retrofit thingy. Sure there are things one can do to make it work even better, but most are not necessary (in my opinion) to use the MES satisfactorily. Getting a AMNPS (to avoid the...
While the Masterbuilt analog model does not have a gasket on the door or body, I have seen posts describing mods/designs for attaching a gasket to the door/body of a smoker. A gasket can reduce the smoke leaking out from the smoker (which is nice), but it probably won't make much of a difference...
Malof28,
I think you definately should get a multimeter and do the tests on the MES as previously recommended. In my opinon you should do these test before doing much else to troubleshoot. The Radio Shack multimeter recommeded above is a very nice one for $36 . If you want to go cheaper...
Maloff28,
The below is great advice, as what is needed is more information and less speculation. Get back with the results of the below test and you will likely get more good advice on what to do next, if anything.
You will get various opinions on soaking chips. My opinion is that it is not worth soaking chips. You only delay when the chips start to smoke rather than significantly lengthen the period of time or change the intensity that the chips smoke. Another opinion of mine is to forget about using...
My experience with Masterbuilt customer service has been excellent. The digital display on my controller went out after the warranty period and they sent a replacement controller unit without charge. The first one they sent turned out to be the wrong version controller (they apparently changed...
You did right getting the AMNPS. However, most prefer using pellets for hot smoking. Thus the name A-maze-N Pellet Smoker. The dust will work OK in the AMNPS, so yu can use it all up before getting pellets..
Many MES users get the AMNPS to avoid the need to babysit the chip tray. The AMNPS provides a nice TBS for up to 10 hours or so without any babysitting.
My opinion is that you put too many pellets in the chip tray at one time for the type pellets you were using. I think that using the right amount of pellets in the MES can be a bit tricky because they burn up much quicker than wood chips, which can result in too thick of smoke. If you are...
