Hi Rick...........the design is what makes it a Reverse-Flow smoker.
The illustration above shows the smoke flow and I have read nothing but great things about the design.
Duck-man..............that monstrosity is coming along really good. I can only dream of making myself one of those!

Try this...............
After you take out the seeds and the veins, soak the Jalapenos in water with about 1/3 cup of salt for about 2 hours.
Drain, discard the water and proceed with the rest of the ABT recipe.

As far as rubs, it all depends on what you want......personally, I don't use brown sugar on any sweetening agent for that matter in my rubs for any beef cuts that I smoke. I would like the quality of the beef that I smoke to...

I think that's the difference..................
That was what I noticed............from what I have read so far, the Big Block has a 36 x 24 x 16 inches box dimension. The $130 model in Walmart has a 34x24x16 dimension.
Looks like Walmart is really doing a rollback on these...................

Water in a smoker provides a shock absorber to stabilize temperatures in the smoking chamber.
Do you absolutely need it for a propane smoker?.........No. You can get better results by mopping or basting your meats.
