    After seeing all those stainless steel ABT holders to stand them up in, I didn't think of any other way until someone uploaded pix of theirs split. So, now it is easier and I didn't have to spend money on an ABT stand!

    Like Texas Hunter said .. no hammers! Which smoker do you have? Today's regulaters have a safety feature that will restrict the gas flow if opened too quickly ... the remedy is to fully close the valve and turn it back on s-l-o-w-l-y, then relight.

    Green wood can be a bit strong ... it is better to season for at least 6 months prior to use. Any of the fruit woods are excellent to smoke with!

    Unfortunately it is not just water ... it is a salt based preservative mixed with the water, not only to increase weight but to give the meat a longer shelf life before reducing price for quick sale. That mentality has increased dramatically here in Canada too!

    I was bad yesterday ... used only 1 rack of my CCSV to do 2 slabs of ribs .... It was still worth it .... Didn't do the 3-2-1 method .... spritzed with apple every hour after marinading overnight then saucing peridically until 5 hours elapsed.

    I hear ya brother! ... I buy as much from my local butcher as my budget will allow ... this place does not compromise on quality! In fact, their sausage is so good, I can find any reason to take the time to do my own... The rest of the time I shop sales at the supermarkets ...
