The end result was pretty darn good. I cooked them for 2.5 hours with is prob 30 min too long @ 225. I was getting good readings off the internal probe and the ThermoPro. The bear was marinated in Italian dressing for 2 hours then after assembling the poppers I covered them with the Italian...
Curious about how to check the temps or how long I might need to smoke some bear loin tips in jalapeno poppers. The meat is about 1 inch cubes and I plan to smoke at 225. I figure about 3 hours of smoking should do the trick however I need to ensure the meat temp is at or above 170...
Just got back some deer mixed with pork...will try out some smoked burgers in the MES per this nice thread:

Ordinarily would expect deer to dry out due to no fat but the added pork may keep it moist. I'll try...

Gonna try out Jeff’s recipe for 3-2-1 ribs tomorrow. However, only have 1 rack (3.8 lbs) and the recipe calls for 2 (4 lbs each). Would I use the same smoking time of 6 hours?

I think its important to let everyone know that if you are worried about ordering from Amazon (shipping damage)...this unit was delivered in good condition. It was packaged fairly well with styrofoam inserts with reinforced rubber corners (to address non-team lift situations....being polite)...
just ordered the 40 MES from Amazon:
Thanks everyone for helping in the selection process! Can't wait to get started - hope to be good and ready for Thanksgiving.
Does anyone have a waterproof cover they can recommend for the 40 MES? The Masterbuilt version of the cover is specified for "indoor use only" which is totally absurd. https://www.amazon.com/gp/product/R3QSWP3XAF/?tag=smokingmeatforums-20
