    Great looking cheese, Don't show to many friends pics or you will have none for yourself.  It happens to me all the time, but I love it. More the merry.

     Vac pack my cheese right out of the smoker. I use to wipe the off, I don't anymore.  the oil draws into the cheese and the don't dry out.

    Picked up a used Hobart mixer from a friend.  No bowl or attachments, but was able to pick them up from a supple store.  Now I had to try it out.  Summer Sausage!  20 lbs. at one time.  Sweet

    Spring Smoke Cheese

    Spring is finally here, time to smoke some cheese.  Sharp Cheddar, Mont. Jack and Pepper Jack.  Friends have been waiting all winter. Using cherry and cold smoking.  Vacuum pack and let it go for 2 weeks, that's the hardest part.
