Or smoke it for an hour or two while it is still cold and wet so more smoke particulates adhere to the meat. Then transfer it to a dehydrator or the oven.
My GMG's lowest temperature is 150°. I have not made jerky on it since it is a lot easier to add a little liquid smoke to the marinade and...
I don't like mayo in potato salad, preferring a southern German style like Grandma and Mom used to make. I like the vinegar and mustard flavor. If it's too much, some sugar can be added to tone it down.

1 large red onion, diced

Dry brined the bones last night. Rubbed this morning.

Temperature was fluctuating wildly- it was windy and snowing. I tossed an old* Army blanket on it to try to keep the cold wind out.
Made some slaw in the mean time. That's a pound...
In the restaurant business, a good manager will have his cooks calibrate their thermometers every shift. Glass full of ice, top it off with cold water and stir until the temperature settles. Should read 32°. We didn't use boiling water since at altitude, it boils cooler, 203° to 208°, depending...

I wasn't happy with my GMG until the lady at the Grillin' Shop told me a few things.
I was cooking too hot. I was used to a Weber kettle. She shook her head at 225°, told me to smoke at a lower temperature.
She also told me to use good pellets. Told me to use Lumberjack 100% oak.
Now I love my...
