    First time smoke on Oklahoma Joe Reverse Flow smoer

    Once the bed of coals is going good....just needed to add a small split of wood probably every 1/2 hour or so. I don't sweat the exact temps, I just keep it in a range of usually 260 - 280 or so. My OK Joe likes to run in the 280 range.

    Seeking advice on improving my brisket cook

    When you say it came out ok, what did you mean...not tender enough, dry, no flavor? What pellets did you use....mesquite, hickory etc.? A little bit more information will help figure why it was ok.

    I agree with Al....I also smoke in the hot and fast style, cook times get shorter and no difference in the outcome of the meat. BUT....Great job, it all looks delicious!!

    The baffle plate is well worth the money. I bit the bullet, bought on and now the temps are pretty even all around. Bought mine from BBQ Mods web site.

    1st Smoke w/ Okie Joe (Lengthy Post)

    Congratulations on a very successful first smoke!! The OK Joe is a really good smoker especially for the price. I oil mine with vegetable oil, never used WD40. I had the peeling paint as well, wire brush it, get some black high temp spray paint. Think that will be a fairly regular event!!

    HELP My pork butt won't come to temp.

    Raise the temp of your smoker....I run my smoker around 280, food cooks much quicker and no difference. If you have to, put it in the oven, wrapped at a temp of 300 - 325.
