The brisket is just because. Although I forgot next weekend is the big game. My team didn't have a chance to get into the playoffs this year so I haven't been following too closely.
In preparation for doing a brisket next weekend I used a 3.5lb chuck roast as an experiment on technique and seasoning. I only underestimated the cook time by 3 hours. My wife said her pieces near the ends were a little dry. That may have been because I tried to ride out the stall but gave up...

So I've been going through this. I have a few victorinox fibrox knives I use for butchering game and they are nice, cut well, and are sharp. But not what I might consider high end. Very good knives for my application, yes.
Now, all my research I landed on trying some Japanese knives...
It was a full, full house in the smoker. I'm surprised they all fit. I need to cook at a minimum 3 racks for the family. I think I'll continue to do 2 racks that I know everyone will like and use the 3rd rack as an experimental rack to try different rubs/sauce combos.
Just want to say thanks to everyone that provided tips and pointers. I crammed 4 racks of baby backs on the 18 wsm yesterday. I followed the recommended 3,2,1 process and had the best FOTB ribs. So simple a caveman can do it.
Can't wait to do them again.
So this weekend I'll be attempting to do baby back ribs for the first time. In the past we have cooked the ribs in the oven in a roasting pan with apple juice/water and then finished on the grill and the ribs were good. Now that I have a smoker the oven is just not going to cut it. Reading...
I have an 18.5 and it is enough most of the time. The 22 would have been better but I couldn't pass up the deal I found on a new to me 18.5. Long term I'm looking at a 24" ceramic kamado joe for extra capacity.
Hershey is in my neck of the woods and I'd sure like to at least stop in. I'll have to see where that falls in relation to my turkey hunting trip up north.
