    Three and a half slabs of ribs went on the smoker at 9:30 pm, presently, at 4:10 am it's 26°F with 6 mph winds and 56% humidity. Not using the 3-2-1 method, just low and slow of 8 hours or so, then to bed I go.

    I use the food saver and reheat by boiling. Microwave is okay for work, but at home we boil in the bag after a thaw in the fridge or not.

    Finally finished, and immediately took one slab of ribs to mother's. My wife ate some of the other slab hot off the smoker. It's tough to get pictures when you have people waiting for the food. Got a hot spot near the firebox even after installing a damper with extension half way...

    What a world of difference. I love this thing. It maintains a temperature range 220 F° and 231 F°. 1/4" steel makes a lot of difference. And I did some temp mods so I could try it out with some ribs and drumsticks today.

    Pork butt doesn't plateau?

    I have had more than one plateau before with the same peice of meat. I have seen plateaus in 170-175°F range many times with pork butts.

    I believe DeeJayDebi's brine to be the one I would use.It has less salt and I have found that chicken can be too salty if brined in one cup of Kosher salt per gallon of water. I have had much luck with turkey breasts, but I keep trying. www.deejayssmokepit.net/Turkey.htm
