Mods in order of priority (in my opinion)–
Add Auber PID (or someone else’s). The heat controller is not adequate (my opinion).

I agree with Dave. You have fuel and oxygen and the precision with which you control each will allow you to control the temperature. I also think the 4” flue should work for you.
I used kitty litter buckets. Of course, my wood chunks are quite a bit smaller. :) I do have a big bin full of apple chunks and I keep the rest of the chunks in the bags that they came in. But those buckets would work. I do 95% of my smoking with those 3 kinds of wood.
My salmon smoking setup is a Bradley Original Smoker with smoke piped into it from a toolbox with an A-Maze-N tube(s) filled with apple pellets. The heating elements (it has 2 totaling 1000 watts) are on the back wall. Because of this I rotate the tray positions and spin them every 30 or so...

I mostly use apple to smoke and I just go to an orchard and ask if I can take their downed limbs and there is usually a place there where their pruners dump them. They have never said "no" and I have all the apple I can use.
I don't think you can create a better chicken for chicken salad than sous vide, at least, from my personal experience. It is always so moist and tender.
