    Bradley smoker modification & improvements?

Mods in order of priority (in my opinion)– Add Auber PID (or someone else’s). The heat controller is not adequate (my opinion). Add additional 500 watt heating element (or one 900 watt element) for better heat recovery. Replace the puck feeder with an A-Maze-N tube using pellets. The pellets...

    Controlling heat issues on smoker.

I agree with Dave. You have fuel and oxygen and the precision with which you control each will allow you to control the temperature. I also think the 4” flue should work for you.

A little outdoor storage space for smoker gear

I used kitty litter buckets. Of course, my wood chunks are quite a bit smaller. :) I do have a big bin full of apple chunks and I keep the rest of the chunks in the bags that they came in. But those buckets would work. I do 95% of my smoking with those 3 kinds of wood.

    Looking for a charcoal grill

You will look long and hard to find a charcoal grill that will top a Weber Performer and it's at your price point, even the Deluxe with gas start.

    Freezing smoked salmon

Personally, I think it's better after freezing so my smoked salmon is always frozen before consumed. Leave it in the fridge overnight, then freeze.

    Fixed my salmon smoking procedure

My salmon smoking setup is a Bradley Original Smoker with smoke piped into it from a toolbox with an A-Maze-N tube(s) filled with apple pellets. The heating elements (it has 2 totaling 1000 watts) are on the back wall. Because of this I rotate the tray positions and spin them every 30 or so...

    Newbie. Help Identify this wood

Second pic maybe beech. I mostly use apple to smoke and I just go to an orchard and ask if I can take their downed limbs and there is usually a place there where their pruners dump them. They have never said "no" and I have all the apple I can use.

SV--Chicken Salad for Mrs Bear (Sous Vide)

I don't think you can create a better chicken for chicken salad than sous vide, at least, from my personal experience. It is always so moist and tender.

Get food recall information emailed to you.

I noticed that a food recall by Rings Я Us wasn’t one I had seen before so I did a bit of checking. I get recalls emailed to me by the USDA and now it seems that recalls are issued by others too, and in this case it’s stopfoodborneillness.org. You can sign up for free email notifications of...
