I'm no scientific genius, but I have built 18 smokers now. So, there are 3 problems from your description. First, get rid of the 4.5" pipe from the FB to the CC. Even though your equations are correct, friction causes a huge problem going from a larger area, to smaller, to and even larger area...
Cowboy, I had the same issue with my stack. What I did was welded a 6x24" pipe. Then when I get the smoker to where were cooking I add a 4' (close too) section of a chimney exhaust inside the welded pipe. Saves my storage space in the shop. Just an idea I thought you might entertain.
I cant help.much when it comes to a gas grill however, if your looking for a great low priced smoker, build yourself a UDS. I promise you wont regret it.
After the initial call, I was curious to see just how long "all day" was. Come to find out though, it's only from 10-2. Some smoking anything for a length of time, is obviously out of the question.
To make a long story short, my team and I are cooking for our local ace hardware store, and I was told to make small portion finger foods. We'll be cooking on their equipment(not to happy about that but it is what it is). Was told we would be cooking for about 100 people throughout the day...
That's an interesting comparison. I have done a few of these before and what I have determined was it was all in who was tasting the product. My third test proved this with nothing but BBQ team members. Just a thought but there is certainly a difference.
