When I started out I wrapped big cuts (tried foil, paper), did the 3, 2, 1 on ribs and all that. Now I just run it all till probe tender without messing around. I like it that way. Dinos are so marbled I dont see why a wrap would be warranted. I am running a pellet smoker as well.
Smokin Al method is solid. I would cook it till done then put it in the chili. A flat will be tough for a while if you pull it at 165.
When I have added pulled pork, chuck, brisket to other meals like soups, chili, mac and cheese etc. Its been fully cooked to probe tender first.
I have never heard of a septic freezing...Sounds truly awful. Been up here for three winters and it gets pretty dang cold. Guessing they dug them deep enough for this not to be an issue? I hope!

Ok the Breville air fryer/toaster oven is great! Heats up super fast, cooks well. I have only baked in it but I can tell we will be using it a lot! Its nice to have a small oven option.
Looks great, finally cold enough for soup weather! We made a 16 bean soup with Italian sausage that was great. Froze a bunch of leftovers. Having ready to go soups in the winter is a gift.

The gas line is done, new 14kw Generac is in place, gas hooked up, wiring from generator to below the deck is in. Last step is to wire the switch next Wed. Looks like we can get the water heater and a couple baseboard...
