    I should have included that, sorry. In using the BES. It's the snooker I started with and hope to upgrade next year. It gets the job done, and since it's electric hopefully that will keep it steady.

    Is there anything special I need to do, or can I just expect it to act as normal? I put a 9 pound pork butt on about an hour ago, and temps seem to be rising normally.

    So a new problem here is It's 3.5 hours till dinner. :) Do I pull now and leave it in the foil, or wait to pull until dinner? For now I just put it in the cold oven still wrapped up. I still have the probe in and its at 192.

    Thanks, Foamheart. I'll keep that in mind the next time I want to entertain with smoked meat! Is there other stuff you prefer to try to smoke for a party type deal, or do you just avoid that altogether?

    I have the Red ECB, the electric. I had to cut the ribs I had in half to get them on it. It's worked out pretty well for a first smoker, I must say.
