I just realized about 4 days into my curing that when I did my TQ measurements I used tsp and not TBS. What do I do here? Let it cure for 10-12 days, add more TQ, or do I have to throw it out?? I had planned to cold smoke this batch.
Knocked out two small briskets last night while I was doing the meatloaf. The reddish one is kind of a Cajun style with butt rub and the second is SPOG. I honestly like the SPOG better. The Cajun one was a hint dry. I didn’t trim either and smoked fat side up. Smoked with pecan a hint of...
I've had a Food Saver for years now. It is overall ok, but I am thinking to upgrade. Lot to choose from these days. just wondering if I could get some ideas to compare. Most my comparisons are through amazon reviews...
A few months back I had 6 pork bellies going in my Landmann 38 wide. I was out doing yard work while it was going. After sometime I came buy just to check the temps. When I walked up I noticed ash by my right vent. Odd. Kicked and sure enough ash came out. looked at the left vent, ash...
Being station here in Japan, I have never tasted such amazing salmon. It truly is amazing. I'm looking forward to a near future TDY to Alaska so I can see the difference between it and fresh salmon there. That being said here are few picks of a couple smokes. I'm still trying different...
I did these for a squadron event a little while back. used ground turkey (DUH) layered in some stuffing and cheese then rolled'em up! There were amazing and hit. Most of these noners had no idea what they were, but wrap anything in bacon and they will come!
Awhile back I did a couple simple mods to my Landmann 38 wide smoker. I picked up and inexpensive welders blanket, pop rivet gun and rivets, 2 side clamps, and some high temp tape for the seals. Everything turned out great and I am able to control my temp much tighter now. The outside is even...
A little while back I did 3 turkeys for one of our squadron events. Bred them up for 24 hours then tossed them in the smoke. my current go to smoker is the Landmann 38 wide propane smoker. Everything turned out great except the top two took a bit longer. I messed up and had them too close...
So it has actually been awhile since I have been on the forum, but I have still continued to smoke. I'm posting some pics of a big smoke I did awhile back. I was heading out on a deployment to Bagram and wanted to make sure the wife wouldn't starve. what you will see is 3 racks of ribs, 3...
Anyone having issues loading pics? I've been trying for the past hour and I can't upload. It is possible it is me though. maybe I shouldn't be doing this at work!!! LOL
Hey! I've been away from the forum for a bit, but not the smoker! I have noticed a lot of new titles and badges. Is there a location that explains what each of them are and how to get them?
Thanks and keep smokin!
Well i posted on here a couple months ago about having problems getting my MES up to the stated 275 degree mark. The first time might have been my fault as I used an extention cord. The second time I plugged it directly into the outlet. I did this 3 more times in separate outlets. I was told...
Just signed up this week and have been reading and learning a lot. I have been smoking for awhile, but see on this forum there is a ton to learn. Which is awesome. I always charcoaled smoked, but just bought a 40 MES. Even though i have probles with it. I started a post on that. Just...
