    Birthday Brisket w Qview

Just tossed a little 11.5 pound packer on the WSM. This is my second brisket cook ever so hoping things go smoothly. Last one was a big success that I am hoping to replicate this time but only time will tell. Temps holding steady at 234 right now. Using pecan and hickory wood chunks. SPOG...

No foil St Louis Ribs w Qview

They were even better today as left overs. Two full racks of St Louis Ribs only lasted 2 meals for my wife my 3 yo daughter and me. I probbaly ate more than a rack just myself. I think I have a problem

No foil St Louis Ribs w Qview

Finished product wasn't my best but was pretty darn good. Too tender for my liking tho. Everyone else in the family liked them so that's all that matters. Here's a few pics.

No foil St Louis Ribs w Qview

Well it ain't that cold here in Orlando but to me 48 is cold enough. The wind is what's miserable. This is the first time I have used a welding blanket and it works amazing. I thought my thermometer was broken because the temp didn't move up or down even one degree for an hour and a half...

No foil St Louis Ribs w Qview

Just threw a couple racks of St Louis ribs into the WSM. Planning on no foil for about 6 or 7 hours. We will see how they turn out. Windy day today so I had to wrap it up with a welding blanket. Rubbed with season salt sugar pepper and vinegar on one and SPOG on the other

    LET'S TALK BRISKET!!

I would start by reading this thread front to back or at least most of it. You will learn so much. The first thing you will learn is you can't cook brisket to a medium or medium well temp of 145-155 degrees. You have to cook it to 190-210 degrees internal temp to make sure the collagen...

    St Louis no foil ribs

I smoked them in my 18.5 WSM with a mix of hickory and cherry wood with no water in the bowl. I put a half ring of charcoal in and 20 lit briquettes using the minion method and once the ribs were done I wanted to see how long that fuel would last. At the 11 hour mark I got tired and went to...

    St Louis no foil ribs

Decided to smoke some ribs today. I also decided to try not foiling them for the first time ever. I must say I will never ever foil another rack of ribs again. They were freakin amazing. Used jeffs rub on some of them and a salt and pepper based rub on the others. Hickory and cherry wood...
