Just got done making some beef jerky.
It turned out better then any store bought!
I cured it over night with sea salt, steak sauce
garlic powder, black pepper and crushed red pepper.
And the next day, I smoked it for 11 hours on low temp maybe
160 to 190 with some cherry wood and a little...
Decided to start a thread about my Custom smoker.
I have named it the Beast!
It started out small and went from there.
Decided to add some propane to the smoker...
And had to either get rid of the Drum or use it, so the build begins!
The door is next. Got it cut out and installed...
Have some yellow fin tuna in the smoker for friend. Can't wait until its done! I'm using pecan for the smoke.

Here is some pics of the smoker. She is real rough right now, but she is getting some paint soon!
That messed up lid is only temporary until I can get a new one. I goofed on how much ventilation it needed.
