    'Cure' vs. 'Curing Salt'

This is referring to toxicity. The video is discussing carcinogens. -sterling

    'Cure' vs. 'Curing Salt'

Ran across this as I was doing research - cooking & tasting sausage as you make it can be dangerous. Have to let it age before the Cure is safe to eat. -sterling

    'Cure' vs. 'Curing Salt'

Yeah, I know. Another newbie question. Sorry. First, yes, I understand the difference between Pink Curing Salt #1 and Pink Curing Salt #2. But, I ran into two recipes for Braunschweiger off site that both list 'Cure #1' as an ingredient, and it was white, not pink, and made no reference to...

How do you record your Recipes?

Volume recipes are difficult to scale, not impossible, just difficult. I wonder why so many are by volume, when weights are so superior. I rarely find one by weight, and have only seen one by %. -sterling

How do you record your Recipes?

Thanks all, so it appears that many of you record by %, as I intend to. So, speaking only to those that record by %, or weight. When you find a recipe you would like to try, and it is in volume measure (1 tsp of red pepper flakes for example), how do you get the weight? (tsp=1.3g for example)...

How do you record your Recipes?

Okay, but are ingredients by measure (regardless if weight or volume) or are they by percentage?

How do you record your Recipes?

I'm just getting started in Sausage Making, so forgive me if this has already been discussed. I'd been collecting a few recipes that I wanted to try. Almost everything has been 'x' lb. meat, 'x' tablespoon of 'y', etc. Then I stumbled across a YouTube video where, instead of measures, they...

    Wanted: Eckrich Smoked Sausage recipe

I've been looking for a while and been unable to find anything. I think part of the problem is that "Smoked Sausage" is so general a term. If you are not familiar specifically with Eckrich Skinless Smoked Sausage you might mistake the request for a Kielbasa, Andouille, or (shudder) hot...

    Thailand wood options

New to Thailand and don’t know where to get wood for my (future) smoker. Needing advice. 1) I’m in rural Surin and not a lot of options. Open fire cooking is common, and mostly they use natural charcoal. To me most of what I see is just old lumber. Oak, mesquite, hickory I cannot find. If you...

    Greetings from a Thai Texan

Will do. Amateur photographer with a bad YouTube Channel. I’ll post when I have something. It will be about a year before I get round to building the smoker, though. Planning an outdoor kitchen/trellis with seating on a deck beside a small goldfish pond… Bear in mind however, ”No plan survives...

Keep the music playing... What/Who Was Your First Concert ?

Unless you count ‘Peter and the Wolf’ in third grade (1964, without parents. Teachers, yes; parents,no.), I’ve never been to a concert. -Sterling

    Greetings from a Thai Texan

Hello All, I’m originally from Texas and have, after 30 years with the company (valve mfg), been retired for about two years now. Last year I relocated to Thailand and married a nice Thai woman. Now she is retired after 29 years with her company (fabric printing). We are building a house in...
