    Assassin smoker in Houston

HI Soren, I'm not in Houston but I just upgraded from a WSM18.5 to an Assassin 17 which is much bigger. The 17 isn't on the website but Jeff will make it for you. The assassin is a beautiful tank that rolls very easily. The details for the smoker are: Interior cook chamber is 18" x 24" x 30"...

Is there a Farmer's Market near you? I go to the Dekalb Farmers Market in Decatur/ Atlanta where they have my favorite Hungarian Paprika.  Maybe there is one near you as well.

    Wild Hog Ribs

We are smoking some ribs from a wild hog my buddy shot.  The ribs have a big piece of meat off the end of them that I assume is the backstrap.  Should we remove the meat from the ribs or leave it on?  I've included a picture as a reference.  Looking forward to seeing the results of the Fatty...

North Carolina sauce for pulled pork ?????

This is really close to what I use as well but also use paprika and I tend to go really light on the brown sugar. I'm a fan of vinegar based sauces but no so much on the sweet.

    WSM or Brinkmann Trailmaster?

I personally have a WSM and love it thus far... Weber makes great products and the customer service phenomenal.  Is using an electric smoker cheating? I guess that's debateable.  I felt like it was cheating so I went with the WSM. I can tell you that the charcoal version is a bit more work but...

    Basic Pulled Pork Smoke

Great read for a newbie like me....  I smoked my first whole chicken and two pork shoulders this weekend and this post helped. Getting the temp correct was tougher than expected.  I added too much of the wrong fuel each time and wasted a lot time trying to get the temp stable in my WSM.  The...

    What is your sauce preference?

Bama BBQ, Thanks for the reply.  Were you in Fort Bragg when you were in the Army?  I lived in Laurinburg NC near Fayetteville. I've been Houston every week since Januaryand I've been putting Shiner Bock down ever since, great beer.

    What is your sauce preference?

Given the wide variety of sauces and regional preferences, I was wondering what type of sauce folks like the most especially for pork (ribs, shoulders, etc).  Being from the Southeast (NC/GA), I prefer a strong vinegar based sauce and the spicier the better.  Typically, I make my own sauce using...

The WSM must have a cult like following as I am getting one this weekend. Enjoyed your post and will refer to it for my first smoke as well.

    Beer Can Chicken

Hello all, I'm new to smoking so this may seem a little amateur for all the veterans out there.  Beer can chicken is really easy to prepare and tastes great.  The base recipe I used is at the following link...
