I'm not in Houston but I just upgraded from a WSM18.5 to an Assassin 17 which is much bigger. The 17 isn't on the website but Jeff will make it for you. The assassin is a beautiful tank that rolls very easily. The details for the smoker are:

Is there a Farmer's Market near you? I go to the Dekalb Farmers Market in Decatur/ Atlanta where they have my favorite Hungarian Paprika. Maybe there is one near you as well.
We are smoking some ribs from a wild hog my buddy shot. The ribs have a big piece of meat off the end of them that I assume is the backstrap. Should we remove the meat from the ribs or leave it on? I've included a picture as a reference.

This is really close to what I use as well but also use paprika and I tend to go really light on the brown sugar. I'm a fan of vinegar based sauces but no so much on the sweet.
I personally have a WSM and love it thus far... Weber makes great products and the customer service phenomenal. Is using an electric smoker cheating? I guess that's debateable. I felt like it was cheating so I went with the WSM. I can tell you that the charcoal version is a bit more work but...

I make my own rubs because I think that's part of the fun. What I use looks something like this:
1 Tbs Hungarian Paprika
1/2 Tbs Onion Powder
1 Tbs Garlic Power
1/2 Tbs Black Pepper
1/2 Tbs White Pepper
1/2 Tbs Sage
1/2 Tbs Cumin
1/2 Tbs Sea Salt
I like Paprika so I usually add extra.
