Looks great! I've cold smoked sea salt a few times, and everyone just loves it. I've not done a hot smoke with salt, but did taste some from a local spice shop. Totally different end results between cold and hot smoking salt, I suggest trying the cold smoke if you haven't yet.
Looks great, good luck with your first bacon! I've done mine at 150* for many hours, and I like the results. I didn't want to "cook" it as much as I wanted the warmth to allow the smoke to penetrate. I thought I read about doing it this way before I did it, but don't remember what thread.

The second generation unit takes some practice to get it right. I've got the 18" tube, and it belched out smoke for 6 hrs, I've not tried shutting down vents to slow the pellet burn. The pellet box is a whole different exercise to keep it going, but keep experimenting!
I can't agree with that statement. I think alligator is delicious, and if I were to try and describe it, it's a cross between chicken and seafood.
I've searched for alligator numerous times on the internet, and don't recall ever seeing where you could buy a full one. But, I bet sending an email...
We did up about 25# of snack sticks, and like you have, they were tasty but soft. Tossed them in a dehydrator, and Bam, we had delicious and snappy snack sticks! I used my electric smoker, but it just wasn't drying them out.

Glad to hear you're making headway, though it sucks to have to add a battery charger and fan to the equation. I smoked bacon on Saturday and had my best pellet experience. Chip tube, tray, and water pan removed, 125 degrees, and it kept a thick smoke going for 12 hours. I suspect the wind helped...
I'm still experimenting with mine as well, and I'll toss another idea out there: remove the chip tube completely.
I've not tried placing the pellet box ABOVE the water pan hole, I've been keeping it below it. I'll have to move things around next weekend on my next smoking adventure...
