    4th failure

We are all our own worst critics, don't get down on yourself.  I know I let the stress of cooking for my family get to me sometime.  It's always hard to plan on an exact time to eat.  I'm no expert but if I know I need food done by a certain time I almost always will wrap.

Mid morning brisket and a new thermometer test. Finished pics.

Man that looks amazing.  Now I want to smoke another brisket!

    To wrap or not

From the information I've gather off this site, it really is personal preference.  Wrapping helps speed up the cook time but can soften up the bark.  I've tried to not wrap but usually run out of time and end up wrapping.

Who all has smoking plans this weekend? I do! I do!

Sorry it took so long for me to post pictures.  Everything turned out great.  The ribs were fall off the bone so not exactly "competition" style but it's what my friends and family were looking for.  I personally didn't get any ribs(they went fast!) but was told they were really good.  Lately...

    I'll never understand "The Brisket"

I posted a few weeks back that I had a brisket get done in around 6 or 7 hours.  I didn't even check the IT until after 4 hours and was shocked at where it was.  Just never quite know I guess.  I had fully expected it to take a good 10 hours at least but as many have said, they have a mind of...

Who all has smoking plans this weekend? I do! I do!

Well just picked up two 6+ pound pork butts for $1.99 a pound and 3 racks of ribs for $2.99 a pound.  Rub them tonight and be ready to go tomorrow morning!

Hickory and apple are my go to for pork.  Have had pretty good luck with it.

That is quite the undertaking.  Hope it turns out awesome!

Who all has smoking plans this weekend? I do! I do!

With the fourth being on a Tuesday(yuck) and since I have to work anyways we are having a bunch of people over this weekend which means it is time for me to break out the smoker again.   Planning on a couple of pork butts, about 3 racks of ribs, probably some jalapeno poppers(pretty much a...

    Fastest brisket in the west?

It's a custom built offset wood burner that my late brother in law built.  Was passed on to me after his death.  Try to use it as much as possible.

    Fastest brisket in the west?

I'm pretty confident that the temp probe was working.  There is usually a temp difference of about 25 degrees between the smoker's thermometer and my thermaprobe and that was consistent the whole smoke.  Smoker showed just shy of 220 and probe average about 245.  I guess I better smoke some more...

    Fastest brisket in the west?

Hadn't had a chance to smoke anything in a long time. The fever finally took over and with a break in the hectic summer schedule threw on a brisket and some stuffed porkloins.   The brisket is a mystery to me.  Woke up 3:30 and had the just under 9 pound brisket on by 4:30.  Using mix of...
