Wound up getting the generic cover off Amazon for $75 and we are smoking ribs today with it. It took 15 minutes to get up to 350F this morning when it was 36 and slightly windy. Last time without the cover it took MUCH longer than that and it never got up to set temp.
The welding blanket sounds like a maybe since it’s pretty inexpensive. Would I just lay it over the top? What do you do with it when you gotta open the lid? Does it get too hot to touch or do I need a pair of fire gloves to mess with it?
We have been kicking around the idea of getting a blanket for winter but were not totally sure about it. This past weekend we did some steaks when the ambient temp was 32. Took a long time to heat up and OMFG the heat loss with the door open.
So I humbly ask that you educate me on blankets...
I want to say we set the oven around 350, not positive on duration but I know we don't aim for an IT in the oven.
Gonna have to try that next time.

We cooked our first meatloaf on the Pellet smoker today. Our usual recipe that we have done 100s of times in the oven except this time on the pellet smoker. We used Pit Boss Competition Blend pellets and set it to 225 and ran it for 3 hours then bumped it up to 275 to try and crisp it up.

We do ribs start to finish unwrapped. About 5-6 hours total. The last batch we added spritzing with apple juice each hour. We have never monitored internal temp on them either. Near the end when the bone ends start exposing we know they are done. We used to smoke on a gasser with a wood chip box...

So I think we hit the stall as of 1 pm central as we only went up 4*F in 30 minutes. We decided to loosely wrap in foil and take the temp up to 250*F. We seem to be back in business. It took 5.5 hours at 225 to go from 34 to 150. Now we are up to 155 1/2 hr after wrapping.

So far we have really enjoyed the pellet smoker and find ourselves grilling / smoking more than before on the old gasser. We are just missing that finishing look / touch of the final...
The new Traeger replaced the old 15+ year gas grill so no way to add a sear burner to it. Somebody else has it now or the metal scrappers grabbed it up on garbage day.
