    Buckboard bacon success!

Thanks all! Yeah, it wasn't nearly as hard as I thought it would be...just lots of little steps. I will say I'm glad I followed the Tender Quick amounts to a "T" and gave it a 4 hour soak before letting it sit overnight. It was interesting to compare the pre-smoked I tasted during the "fry...

    Buckboard bacon success!

After ruining more things with cure than I care to admit, I pulled off my first successful bacon cure & smoke! I'll keep it short and to the point. Had a 6ish pounder bone-in shoulder. Following various guides and recipes on SMF I cut it into two halves lengthwise along the bone. Trimmed...

    Tamales?

tamale "traditions" differ across regions. Being from South Texas, ours were a bit different (but similar) than those discussed above. I'd say as long as the meat is tastyand falls apart you're probably good. We'd re-cook ours with our "traditional" chili paste and spices blend before...

    tender quick???

I haven't got the hang of Prague #1 yet as I have managed to practically ruin everything I've tried to do with it so far. Except that turkey breast, which came out great! And yes, I followed the instructions that came with it, used a scale, etc. Obviously I missed something though. It was...

    fajitas

Well dang, those look great! I'll have to give'em a try in the smoker! mgwerks, I very well could be totally wrong, but I don't think the HEB ones down in Laredo are non-skirt. I'd think the HEB exec's would be kicked out on the highway past the border patrol station if they tried slinging...

    fajitas

one more thing... Surprisingly, HEB's pre-marinated beef (and chicken) fajita is good too. Down home they also carry freshly made flour tortillas and the pre-prepared masa for corn tortillas. Just flatten out and grill on the comal. Man, it don't get much better than that!

    fajitas

Ah, seeing that you got it from the mexican market and given that you're in North Texas (I'll forgive you ), you probably have "the good stuff". Either way, let us know how it comes out!

    fajitas

You talking actual skirt steak or something like sirloin or flank steak cut into strips? I'm all for experimenting and letting us know how it goes, but I don't think skirt would do too well in the smoker. At least it won't be prepared in what I consider the traditional fashion. To me it just...

    Blank Slate in SE(ish) Texas

Great to hear it! Don't worry about the snow, that's pretty rare...but watch out for that summer-time humidity! It can be brutal!

    Blank Slate in SE(ish) Texas

Welcome! This place will get you started on the right foot! That's funny, we did the opposite as you guys...we were in that area of TX then moved to SoCal for 2 years. Talk about a big culture shock for ya (and us)! We lived in College Station and it a was culture shock even for a kid FROM...

    Time to upgrade...

+1 the vertical gasser-type. I was in a similar situation as you are and ended up with a King Kooker 38". It's easy to use (I have an active 15-mnth old son) and versatile. I don't mind running it with only a few things for the fam but you can REALLY load it up. Holds temps well even in...

    tenderizer vs tender quick

Variations of this topic have been covered but I don't think q has been specifically. Is something like Adolphs Meat Tenderizer (lawry's) different than something like Mortons Tenderquick? I think the answer is going to be "yes they're different" as the lawrys stuff uses papya enzyme to...

    King Kooker 38" smoker review

Thanks for the info Shellbellc! It's good to hear that you're still digging your after a couple years of use. Good trick to crisp up the chicken skin, my last chicken attempt ended up with soggy skin. And Jerky is on my real short list of things to smoke in there!

    King Kooker 38" smoker review

Without getting my hands dirty using it, I gotta rely on a "5-min with my squirming 1 year old son in my arms" impressions only: The KK is wider. I measured my rack straight across at 18" and diagonally at 20". If you're looking for super wide, a GOSM, or smoke vault, or other 24 incher would...

    King Kooker 38" smoker review

I'm not entirely sure but I think it has to do with how the regulator outputs the pressure of the gas. The high pressure one can get much hotter (higher BTUs, think frying turkeys) whereas the low pressure one isn't as hot (lower BTUs) but lasts longer? Might be worth an email to KK direct...

    King Kooker 38" smoker review

Absolutely! I know all the info on this website helped me when I was shopping so I figured I'd contribute back. I'm still happy with mine and KK is gonna send me a replacement thermometer. I will say I got to see the big block GOSM in person recently. It does look like a well built and well...

    New guy from NC

Those are two that are on my short list. I've been to Bill Ellis BBQ but never Parkers. If you haven't hit Gradys (or even Wilburs for that matter), I highly recommend you try'em! Grady's is in Dudley, NC where Arrington Bridge and Sleepy Creek Rd meet. It was featured in a recent issue of...

    New guy from NC

Hmmm, Kenly? Outside of the obvious choices in Goldsboro and Wilson, you have any good grub (bbq or otherwise) recommendations in your area? BTW-Grady's in Dudley (just south of Goldsboro around the corner from Cliffs of the Neuse SP) is one of my all time fave eastern-style bbq joints!

    New to site from NC

Welcome from another NC'er! I'm in Durham but get around the state (especially east) for work. The friendly kats and vast amount of info on this website should help you in your smoker quest (and afterward). Do your research online, read about the different types of smokers, and determine what...
